Foodie-licious: How to make Puchero 🍲

Puchero is a Spanish word which means "stewpot". There are different types of puchero, there is what they called Rio de la Plata Puchero, Andalusian Puchero and of course Filipino Puchero or Pochero.

In Filipino this is a native dish that passed from generation to generation. My Mom used to cooked this when I was a little :) and as a child I won't forget the taste of "pochero", It tastes like banana plantain or in Filipino "saging na saba". No wonder because banana is one of the main ingredient of this dish, without it, this wouldn't be a PUCHERO.

The elements used in cooking this dish depends on the indigenous ingredient available and on the local palate of the region or how your family cooked this.

Today, I will share you how to cooked PUCHERO :D Here's how.

PINOY PUCHERO

Ingredients:

3 cloves garlic, crushed
1 medium red onion, chopped
1kg pork leg (pata ng baboy), chopped
1 small pouch tomato sauce
1tbsp tomato paste
2 stalks chinese cabbage (pechay/petsay)
1 small cabbage, quartered
2 medium sweet potato (kamote)
2 medium potato (patatas)
3 banana plantains (saging na saba)
1 cup string beans (baguio beans)
1tbsp extra virgin olive oil
1 pork/beef bouillon
salt and pepper to taste

teary eyes* make sure you have a very sharp knife in cutting to avoid crying (HAHA) or soaking the onion in cold water before chopping.

Lot's of Pechay or Bok Choy just because I love it :P

I used organic sweet potato and it's so good and naturally sweet!

You can use any kind of meat like beef, chicken even fish or any seafood that you like, just make sure you cook the meat in the right amount of time.

How to cook:

  1. Heat the pan before placing the oil.
  2. Saute garlic in a medium heat, then add onions.
  3. Add your pork pata, saute for 5mins, add your bouillon and 500ml water then cover the pan, simmer for 30mins until your pork is tender. (whenever your pork is not yet tender just add water then cover it until the pork is ready).
  4. when your pork is ready, add sweet potato and potato, simmer for 10mins.
  5. add your baguio beans, banana plantains, cabbage and pechay mixed in tomato sauce and tomato paste. Simmer for 7mins.
  6. add your salt and pepper to taste.

And you're DONE! Take a look at what have I made :)
