Baked Chicken with Simple Rice and Beans My Way
Pictured is the simple meal me and my son shared two nights ago. It was pretty easy to make even for an amateur cook such as myself.
I simply used a bit of Korean BBQ marinade that I found around the corner. Literally the Korean market is right around the corner from where I live in Tampa. It brought back quite a few memories of my time in Seoul.
After the chicken was in the marinade for a few hours I baked it with the skin off. Since the skin is where most of the fat is, I decided to remove it for baking.
The rice and beans were even easier since the beans were somewhat pre-seasoned in the can, I simply mixed them with some rice that I made earlier that day.
And that was it. Corn didn't need to be mentioned since I just opened the can and divided between myself and my son.
