Chimichurri, great bbq side!!🔥

I was just making some chimichurri because i'm going to start to work with a Spanish Txogitxu steak. I'll give you an update when i have it.
This one ofcourse is going to need something special on the side. Like for example a great fresh "chimichurri".

Chimichurri is Argentinian pesto. Made with lots of green herbs, garlic and some chili.

I'll give you my recipe:

50 grams of Jerez vinegar or other vinegar or limejuice
100 grams of parsley(not the curly one)
25 grams of fresh oregano leaves
20 grams of basil leaves
20 grams of cilantro

1 chili without seeds
3 or 4 garlic cloves
The leaves of 3 thyme sprigs
5 grams of salt
250 grams of good olive oil
100 grams of sjallots

Cut it all a bit with your knife, then put it in a cutter. Or if you have, a thermomix.

This is a great machine for all kinds of stuff, everybody should have this at home.

So anyway, just pulse it a bit in your thermomix or cutter. Not to much because it needs to stay a little rough.

And then taste for your personal flavour.

Man! This with a piece of meat! The best!
