Me and Lamingtons 3: Green Tea Lamingtons

My 3rd posting on vegan Lamingtons recipes!
Say whaaaat??? You never heard of Lamingtons? It's good Aussie food. That's what my Mum would say 😁
Lamingtons are bitesize sponge cake that is dipped in chocolate and coat in coconut.
Many people make variety of lamingtons, so you can find them in Easter colors of pink and blue, many kinds of flavors, of lemon, strawberry, tiramisu, and more. In fact, the Asian version has Pandanus flavor! - Pandan is fragrant screwpine leaf.
Obviously, the original Lamingtons are chocolate dipped, which I have shared the recipe here, vegan of course. They are to die for, for sure, but it doesn't hurt exploring other flavors, right? 😉
I am posting recipes of lamingtons for 3 days in a row now because Aussie Day which also happens to be my birthday is coming up. Instead treating myself with a cake, I am treating myself with various lamingtons, until D day is here 😏
Today, the flavor is.....roll the drum....Green Tea!
The cute name for green tea is of course matcha
My 8 yo was pretty happy as he said it's his favorite flavor (this was the first time I heard so 😂 But yeah he does like green tea KitKat), and I have to agree with him, it's quite nice, I surprised myself! 😂😂😂😂
Joking aside, I have to tell you, the cake turned pinkish instead greenish! That was...odd. I was hoping when I prepared the batter, the cake would turn a little greenish, but nope.
Let's see how I made these babies 😊
- Pulverized about 1/2 c green tea leaves
- Dissolve 1 tbsp green tea powder in 1 C hot water
- Once tea is cooled, strain and discard the residue
Green Tea Sponge Cake
- 1 1/2 c flour
- 3/4 c sugar
- 1 tsp BSoda
- a pinch of salt
- 1 c green tea liquid
- 1 1/2 tsp vanilla essence
- 1 tsp vinegar
- 5 tbsp vegetable oil
How To
- Mix dry ingredients in a bowl, make a well in center, pour wet ingredients, mix to combine
- Pour batter into parchment lined square pan and bake in preheated 350 F for 25 minutes
- Cool on rack and cut into squares
Dipping
- Dissolve 1 tbsp green tea powder in 3/4 c hot boiling water, strain
- Mix in 1 tbsp vegan margarine and 1/2 icing sugar
Coating
- Desiccated coconut mixed with leftover green tea powder (less or more is depending how you like green tea). Pulverized to coconut flour, then mixed in 1 tbsp icing sugar
Lamingtons
- Quickly moisten cakes (without soaking much of the dipping) - easiest is with putting on kitchen gloves instead forking the cake
- Roll to coat on coconut
- Serve chilled (is the best IMO)
Coconut Whipped Cream
- The night before, chill a can of coconut to produce coconut cream.
- Scoop our hardened coconut cream into a mixer bowl and beat with 1/4 c icing sugar until whipped cream consistency
- Pipe/spoon a dollop onto lamingtons
Coconut whipped cream is optional though 😉

Note: These green tea lamingtons make awesome Minecraft blocks, apparently 😂 That's what my 4 yo son said when he saw them. He said "Mommy, you made Minecraft cake for me?".

You are right, i have never heard about Lamingtons. Maybe will try one day. It looks eatable hehe...
The Hungarian have something similar, called kokuszkocka, I wonder if you actually have tasted Lamingtons in Lithuania or somewhere in Europe with different name 😊

You had me up till coconut. I want to like it but I just don't. However, I think it was okay in a pina colada. It's been too long since I have had one to say for sure. lol
