Thai Chicken Curry ~ Recipe and VIDEO!
This Thai Red Curry Chicken recipe is easy, creamy, spicy and good. Using red curry paste, garlic, coconut milk and thai basil, this Thai dinner is a winner. Great balance of flavors. VIDEO RECIPE below. Enjoy
How to Make Thai Red Curry Chicken
INGREDIENTS
1 pound sliced chicken breast or thighs
1 can coconut milk
1/2 cup chicken broth or water
1 cup sliced onions
1 cup sliced bell peppers
1 cup bamboo shoots
2 kaffir lime leaves - tear in half
2 tbsp. red curry paste
2 tbsp. fish sauce
1 tbsp. sugar
1/4 cup thai basil leaves
1-2 tbsp. oil
In a pan on medium heat add oil and red curry paste.
Stir and cook for one to two minutes.
Add minced garlic, stir and cook for one minute.
Add fish sauce and sugar. Stir to combine.
Add coconut milk, broth/water, kaffir leaves and vegetables.
Turn up heat, stir and bring up to a boil.
Add chicken pieces, stir, bring up to a boil, lower heat to a simmer, cover and cook for 10-15 minutes until chicken is done.
Turn off heat, take out kaffir leaves, add thai basil and stir to combine. Serve immediately.
Served with jasmine rice or rice noodles.
Enjoy.
