Chicken Wings and Drumettes with Honey-Adobo Sauce with roasted broccoli / rice and beans

Chicken wings and drums can be surprisingly sharpened in the oven, largely thanks to the blooming coating, which helps to create any excess fluid on the skin. This version ends with a sweet and spicy sauce and served with broccoli and rice and beans on the side.

Ingredients:


Chicken Wings and Drumettes with Honey-Adobo Sauce:

  • Chicken, small wings and drumettes - 2 lbs
  • Baking powder - 1 1/2 tsp
  • Salt - 1/2 tsp
  • Foil - for baking
  • Lemons - 1/2, wedges
  • Honey Adobo Sauce and Dressing (ingredients listed separately) - ~1/3 cup
Honey-Adobo Sauce / Dressing:
  • Vinegar, red wine - 1 1/2 Tbsp
  • Adobo sauce - 1 Tbsp (usually found with canned chipotle peppers)
  • Honey - 1 Tbsp
  • Paprika, smoked - 1/2 tsp
  • Oil, cooking - 3 Tbsp
Roasted Garlic Broccoli:
  • Broccoli - 1 lb, chopped
  • Garlic - 4 cloves, sliced
  • Oil, cooking - 1 Tbsp
  • Lemons - 1/2, wedges
Rice and Beans:
  • Rice, uncooked white or brown - 2/3 cup
  • Cumin - 1/2 tsp
  • Beans, black (14 oz / 397 g) - 1 can, drained and rinsed
  • Cilantro - 1 Tbsp, chopped

Prep:

  1. Chicken - (If prepared just before cooking, heat the oven and cook the chicken before continuing preparation.) Dried wings and thighs. Cast with baking powder and salt. Set aside for 20 minutes.
  2. Cook rice - For white rice, rinse until clear. Fill a pot or pot of rice (or rice cooker) with rice, water (using a 2: 1 ratio for water for rice), dill, and some salt. Cover and boil. After boiling water, stirring, cool down to medium and cover. Check for white rice after ~ 20 minutes; brown at ~ 45 minutes. Rice is made when it absorbs all water. If it is not done, leave the lid on until all the water has been absorbed. Remove the lid to release steam and fluff with a wooden spatula after 5 minutes. (Can be done before 5 days)
  3. Make honey sauce / sauce - (Double if Thursday dinner.) Beat together vinegar, marinade, honey, chili powder and oil (dressing). (Can be done before 5 days)
  4. Broccoli / garlic -(Can be done before 5 days)
  5. Beans-Rinse and rinse.

Make:

  1. Heat up to 450F / 232C. Lay out two pan.
  2. The first leaf pan with leaves. Place a safe cooling rack for the furnace on top. Rack top coolers with chicken wings and drums, leaving some space in between them so the air can circulate (this will help them to get crispy). Grilled chicken until cooked and crisp and golden on the outside, halfway to cook, ~ 35 minutes. (Watch this video to see how we make grilled chicken wings.)
  3. Spread broccoli and garlic onto the second pan. Toss with oil (the part for broccoli) and season with some salt. Bake broccoli until soft, shake pan halfway to cook, ~ 20 minutes.
  4. Lemon slice (for chicken and broccoli) and coriander.
  5. If rice is made first, warm up. Stir bean and cilantro.
  6. When the broccoli finishes, squeeze the lemon (the broccoli part) up.
  7. When the chicken is finished, toss it with honey sauce (store half if doubled for fifth).
  8. Serve the chicken on the rice with broccoli and some lemon wedges on the side. Enjoy!
