Hey Steemians! I am very open about new things, but I love simple traditional recipes with love in detail. As a child I was the vacation often with my grandparents and my grandmother was a gifted cook. Since she unfortunately does not live anymore, but old cookbooks and my memories have remained so I tried to cook her dishes. This recipe is one of it...just delicious and very close to her dish!


Ingredients for 4 people:


1 Cauliflower
parsley
250ml cream
potatoes for 4 people
nutmeg 
4 cutlet meat from pork or calf
5 eggs (organic)
flour & breadcrumbs for the coating
10ml sparkling water
oil to fry
salt & pepper to taste
1 organic lemon


The Cauliflower

1. Cut the cauliflower, put the roses in a pot and cover with cold water. Taste with salt and cook softly.


2. Remove the cauliflower from the water and then cut the stem and cook in the same water. When the stem is soft, crush with a blender.



3. Now take a cup of the vegetable water and let it cool. Add the remaining veg. water with cream and add the boiled cauliflower.



4. add one egg to the veg. water in the cup and whisk it.




5. Now put everything into the pot and gently mix with medium heat. Add grated nutmeg and taste with salt & pepper.If desired flavor it with grated chilli. For a better bonding use some flour- butter.







The Schnitzel:

1.Prepare a coating street.

Left= flour

middle = 4 eggs & 10ml sparkling water (the water make the coating fluffy)

right= breadcrumbs



2.Pound the meat and coat it. Peel the potatoes and cook in salted water.(not shown)






3. Heat the oil in a pan (not too little, the slices should be covered) and fry the schnitzel to golden color. When the schnitzel are finished dry them seasoning with salt and pepper.


4. The sauce again briefly heat and taste. Add the chopped parsley.



Put everything on a plate, decorate with parsley and lemon.
