Chicken Potjie

This is a all time favorite for the family. Evolved over the years and I changed it as the kids grew older, especially when they needed more vegetables.

1 full chicken
4 medium sweet patatoes
3 patatoes
2 onions
4-5 carrots
Mix up with baby corn, broccoli or basically any vegetables.
1 packet knorr cream of mushroom soup powder.

Fry the onions and carrots in a pot with a little bit of olive oil. When golden brown add the chicken pieces and directly there after add a little bit of boiled water. Keep adding a little bit at a time. Now add some crushed black pepper. You may add the black pepper at the beginning with the onions if you like a better pepper taste. Some salt and chicken spice. Garlic if you like it. Then some garlic and herb spice. Cook over a fire with medium heat for 1 hour. Lastly add the packet of cream of mushroom knorr soup powder. Small trick. If the pot is dry add the soup powder mixed with jot water. If you would like to get rid of some of the water then scoop some of the water from the pot to mix the soup powder with.

After this simmer for 10 more minutes and enjoy.
