Steemit Culinary Challenge #18 - Dietary pumpkin casserole with tomatoes and mushrooms

Brief information for anyone who are watching their figures, the energy value of 100 grams of pumpkin - only 22 kcal, fat - less than 1 gram, carbohydrate - 2 grams, and useful fiber - 10 grams. Also in a pumpkin is present huge amount of beta-carotene, vitamin and mineral micronutrients. As a dietary pumpkin just irreplaceable.

Ingredients:

  • 1-1.5 kg pumpkin (Not too sweet variety)
  • 500 grams of mushrooms
  • 2-3 tomatoes
  • 1-2 onions
  • oil
  • salt
  • pepper

1. Pumpkin clean, cut into cubes size 1,5 cm, sprinkle with oil and put it bake in the oven until cooked at 180 degrees Celsius (cooking time of different pumpkins can vary).

2. Onions and mushrooms clean, cut into cubes, stew in vegetable oil in a pan a few minutes.

3. Tomatoes pour over boiling water, peel. Cut it into slices.

4. When the pumpkin is ready, put on it a layer of mushrooms, salt and pepper, put slices of tomatoes and bake in the oven for another 30-40 minutes.
