Mouth Watering Clean and Healthy Pancakes that are Gluten Free and Vegan Friendly
What!? pancakes? Healthy? Yes indeed. If you knew me in “real life”, you would know that I love sweets, but I also love fitting into all of my clothes and eating to prevent upset stomach and allergy symptoms.
Full disclosure: I’m picky picky and have allergies. These pancakes are husband-tested and picky eater approved.
Here’s what you’ll need:
*1 Cup of Oats (I used organic rolled oats)
*A food processor
*coconut oil (for frying)
*A stove and a frying pan (duh)
*2 eggs (or a banana if you are vegan)
*1/4 cup of almond milk or coconut milk
*fresh or frozen organic berries
*maple syrup
Alternate Vegan recipe
Use a banana to replace the eggs. You can also use coconut milk or another type of milk instead of almond.
Add 1 cup of oats to your food processor. Process it into oat flour.
Add to a bowl with the eggs (or bananas) and berries and almond milk. Mix well.
Fry in coconut oil. Makes 5 to 6 pancakes. Enjoy with a friend or eat them all yourself.

I already tried it. I think I used too much eggs because they turned up very eggy and a bit gritty - I might try the banana substitution instead. I also think I made a mistake in trying to mix by hand not food processor - don't have one will need to ask my Mum lol. Apologies I'm not much of a cook but am always on the lookout for healthy recipes particularly for breakfast as I just don't feel very hungry in the mornings so have a tendency to go for more unhealthy stuff at the last minute. Particularly when I'm working and if the canteen is open early.
That's a bummer...a mixer or food processor would be best. I haven't tried mixing by hand so that might be the issue. I know what you mean about not being hungry in the mornings...it's a habit that is worth changing :)
