Palak Paneer | Sanjeev Kapoor Khazana
2 large bunches spinach (palak), blanched and pureed
250 grams cottage cheese (paneer), cut into ½ inch cubes
1 tablespoon oil
1 teaspoon cumin seeds (jeera)
1-2 green chillies, chopped
1 tablespoon chopped garlic
¼ teaspoon turmeric powder
Salt to taste
1 tablespoon fresh cream + for drizzling
Method
- Heat oil in a non-stick pan. Add cumin seeds and when it changes colour, add green chillies and garlic and sauté till garlic turns golden brown.
- Add turmeric powder and sauté. Add spinach puree, mix and cook for 2 minutes. Add salt, mix and cook for 1-2 minutes.
- Add cottage cheese cubes, mix and cook for 1-2 minutes. Add 1 tablespoon cream and mix well.
- Drizzle some cream and serve hot.
