Oxtail with Peanut Butter Sauce

Hello and greetings to everyone. Well, today I wanted to share this kind and type of dish with all of you. One of the main ingredients to this dish is Peter Pan creamy peanut butter. So, here you’ll find out that peanut butter isn’t only made for making sandwiches, but also for cooking with meat particularly the oxtail.

My mom used to cook this a lot when I was a kid and this type of dish comes or served with salted fried shrimp. I didn’t like the taste of salted tiny shrimp at that time, simply because of its pungent smell, but as I’ve grown and eat this dish I’ve learned to like it somehow and began eating it as part of the dish as it’s what it’s made for in the first place. It’s one of those dishes that you’ll get to learn the more you eat of it. But you can certainly eat it without it, if you desire. The dish remain very delightful to eat and it’s nutritious as with any other dishes.

Anyways, other than that and having said that, I can assure you that this dish is exotically delicious. The peanut butter just gives that savory of the creamy peanut taste into the meat that just melts in your mouth. The vegetables are flavorful accompaniment in its entirety of the cooking process for this particular dish.

The price of oxtail in most grocery stores that I’ve checked is about $28.00 a package that contains 6 oxtail pieces. But where I purchased my oxtail from is way much cheaper at the commissary than the grocery stores outside. I purchased 2 packaged that contain 3 oxtails in each package and the total cost comes to $12.00. And the rest of prices of the ingredients are cheerfully cheap.

Preparation Time: 15 minutes
Cooking Time: 3.5 hrs
Servings: 3

Oxtail with Peanut Butter Sauce

Ingredients:

2.5 – 3 lbs. oxtail pieces
¾ - 1 c. Peter pan creamy peanut butter
6 leaves of Napa Cabbage cut in half lengthwise
17-20 pieces of fresh green beans, trim the ends, if not already.
2 eggplants, sliced diagonally
3 cloves, garlic, minced
Johnny’s seasoning
1 white onion, sliced
1-2 tbl. Vegetable oil
4 packets of sazon Goya seasoning
Fried salted shrimp (can be purchased at your grocery store in the Asian food aisle).

Steps and Procedures:

In a large Dutch pan, place the oxtails, and put enough water just to cover the meat with liquid, to cook over medium heat and then bring it to high heat to boil.

Note: Immerse the sliced eggplants in a bowl of water and put a saran wrap over it, since cooking the meat takes 3 hours.

Lower the heat and sprinkle or season with Johnny’s seasoning according to taste and cook for 3 hours until the oxtails are tender or soft

In another large Dutch pan, heat the oil, over medium heat, and sauté the garlic for about 2 minutes, then add the onions and cook for another 2-3 minutes.

Add the oxtail and all the liquid to the pan.

Add the peanut butter and Sazon Goya seasoning, stirring constantly to mix and to blend all the flavors.

Cover the pan and simmer for about 10-15 minutes.

Add the vegetables: green beans, eggplants, and cook for 3-5 minutes.

Add the Napa cabbage and cook for another 2 minutes.

Remove the pan from heat.

Transfer the meat with vegetables into a serving platter.

Serve with rice and salted fried shrimp if desired.

Howdy back janton. Yes, that is actually a traditional Filipino food. You haven't eaten oxtail before?
Consider trying it then...it's only meat, peanut butter, and veggies.
I'm not sure you'll like the salted shrimp, but you can omit it.
If you do try it, let me know if you like it or not...lol

ok, roger5120 ..no I haven't ever eaten that before but it sounds very interesting! I could handle the shrimp I think.
