Dave's Chicken Vegetable Minestrone!! 😋

Well, that's what I call it anyway.
Years ago there was a amall restaurant here in Bakersfield called Don's House of Fine Food. They are long gine now, but I remember their minestrone soup like it was yesterday. This is my attempt to recreate it, with added chicken. Here's how to make it:

First, get one of those cooked chickens at Costco or equivalent at your market.
You'll also need:
1 can each, opened and drained, of
Red beans
White beans
Diced tomatoes
Also,
Three carrots 🥕
Three sticks of celery
One large or two small potatoes 🥔
One medium onion
Half of one package of spaghetti, broken into small pieces

Remove all the meat you reasonably can from the chicken carcass and save it for later uses.
Remove and throw away the skin and excess fat.
Put all the remaining bones, etc., into a large soup pot, fill with water and slow simmer on the stove for many hours to make the stock. When done, strain into a suitable pot and throw away what remains in the strainer. Place in the refrigerator until cool, when cool remove from the refrigerator and skim off excess congealed fat. Place the stock back in the soup pot on the stove on medium heat. While the stock is heating,
Peel and dice the potatoes.
Peel and slice the carrots thin.
Slice the celery thin.
Chop the onion any way you want.
Chop up/dice half the chicken meat.

Put all of the ingredients except the spaghetti into the soup pot, add water to reasonably fill the pot and let simmer on medium heat for a couple of hours, stirring occasionally. Test the carrots and potatoes for doneness, when done reduce the heat to low. In another small pot, boil some water and cook the broken spaghetti pieces in it. When done, drain excess water and add the cooked spaghetti to the soup pot.

Season/salt to taste, I used a teaspoon of Italian chicken seasoning.
