Savoury vegetarian recipe idea: Colourful vegetable Lasagna with chickpeas - Herzhafte vegetarische Rezeptidee: Bunte Gemüselasagne mit Kichererbsen (ENG/GER)
My wife asked me to make a vegetarian Lasagna, here is what I came up with today.

lasagna sheets | Lasagne-Blätter |
sieved tomatoes 500 gr | Passierte Tomaten 500 gr |
4 fresh tomatoes | 4 frische Tomaten |
tsb tomato paste | Teelöfel Tomatenmark |
2 zucchinis | 2 Zucchinis |
can chickpeas | Dose Kichererbsen |
6 carrots | 6 Karotten |
1.5 red onions | 1,5 rote Zwiebeln |
handful of curry leaves | Handvoll Curry Blätter |
1/2 broccoli | 1/2 Brokkoli |
fresh basil | Handvoll frischen Basilikum |
tsp of oregano | Teelöfel Oregano |
fresh prig of rosemary | Zweig frischen Rosmarin |
1 broth cube | 1 Brühewürfel |
tsp of salt | Teelöfel Salz |
tsp of pepper | Teelöfel Pfeffer |
tsp of sweet paprika | Teelöfel Paprikapulver (süß) |
grated mozzarella 200 gr | geriebener Mozzarella 200 gr |
First, fry the onions.
Brate die Zwiebeln an.
Add the vegetables.
Füge das restliche Gemüse hinzu.
After 2 minutes add tomatoes, sieved tomatoes, tomato paste and the broth cube. Let it cook for 5 minutes.
Nach 2 Minuten füge Tomaten, die passierten Tomaten, Tomatenmark und den Brühewürfel hinzu. Lass es 5 Minuten kochen.
Add the herbs except from the rosemary.
Füge die Gewürze hinzu bis auf den Rosmarin.
Now fill the roaster layer for layer. Sauce, next lasagna sheets and so on.
Fülle dann den Bräter Schicht für Schicht. Sauce, Lasagneblätter und so weiter.
Parish rosemary needles on top.
Streue die Rosmarinnadeln auf die Lasagne.
Next the cheese ...
Nun den Käse ...
... and then into the preheated oven, at 200 degrees for 20 minutes.
... und ab in den vorgeheizten Ofen - für 200 Minuten bei 200 Grad.
The job is done, we both enjoyed it, are stuffed and managed, which was hard, to leave enough for our lunch boxes for tomorrow.
Job erfüllt! Wir haben es beide genossen, sind satt und schafften es, was uns schwer fiel, genug für unsere Lunchboxes für morgen übrig zu lassen.

Yummy yummy yummy... I will have to try this, I love using chickpeas in vegetarian dishes, they provide such a wonderful texture
You are so right @woman-onthe-wing! First, I wanted to use sweet corn but chickpeas was definitely the better choice.

Kidney beans are also one of my favourites for texture at the moment. I have just bought some black turtle beans but have yet to try them. At least preparing vegetarian dishes you're forced to get creative and try new things!
I can imagine but that is a such beautiful thing - to be creative, to try out tons of different things, be surprised here and there and explore a variety of tastes!
