Beautiful! I would have them cut in carpaccio, season with olive oil, little honey, lemon juice and salt/pepper! Then accompanied with either goat cheese or feta! Would be delicious!
Thanks for the tip. I like feta and I think that would go great with beets. The honey and lemon would be good too I bet.

Yes I agree they are very good warm too. I usually taste some right after they're done cooking and save the rest for a salad.
