FOOD DIARIES Act 8 - ***Chicken with Lemon Confit*** A Moroccan Classic!

Now back to today's recipe, well I am going to share the dinner I had actually! One of my favorite dish coming straight from Morocco! As usual simple to make and super delicious guaranteed!
CHICKEN WITH LEMON CONFIT
To realise this amazing recipe you will need :
• Chicken Leg with skin on – 2pcs
• Lemon Confit – 50gms
• Safron Pistils – 1 pinch
• Onion – 2pcs
• Garlic – ½ bulb
• Fresh Cilantro – 30gms
• Olive Oil – 2tsp
• Vegetable Oil – 2tsp
• Salt to taste
• Ginger Powder – 3gms
• Black Peppercorn – 2gms
• Curcuma Powder – 3gms
• Yellow food color Powder – 1gms
• Cardamom Powder – 1gms
First step, chop the 1 onion, the garlic, lemon confit and cilantro like below!
Add all the spices mentioned and season it! Mix all together to get a beautiful yellowish marinade!
Spread this marinade on the chicken legs! Make sure to put in under the skin too! It will be much more delicious!
This is how it must look after marinating! Well spread everywhere on the chicken meat! You can do this step like 1 hour before cooking! The more time it marinates, the better will be the final results!
Chop the 2nd onion and add it to a heated cooking pot with both olive oil and vegetable oil! Let it cook for some minutes, lightly caramelised!
Put the marinated chicken legs on top of the cooked onions! Beautiful!
Add 1 cup of water or chicken stock if you have and a handful of green olives if you wish! Let it cook for about 15 minutes on high fire!
After 15 minutes, take out the chicken from the cooking pot and put it on a greased cooking plate!
Put in the oven at 180 degrees for 10 minutes for it to be well caramelised!
In the same time, let the sauce in the cooking pot on fire to reduce till a thick consistence.
Once the chicken legs are well caramelized like the below photo, take it out from the oven!
Put the pieces back in the cooking pot containing the sauce and cook for 1 more minute till the chicken is well glazed!
Serve with some French Fries on top and eat with bread or steamed rice if you wish!!!

My mouth is watering like crazy.
I have never once considered putting the spice rub UNDER the skin but the infusion of flavor must be divine as it has a better chance of marinating the meat. Thank you for that tip too.

I have learned this with French cooking where they put truffle and butter under the chicken skin, it is just out of this world!
