STEEMIT CULINARY CHALLENGE # 26: Mango coconut cream
Another culinary challenge to join!
This time, the challenge is “Sugar-Free Raw Vegan Desserts”. Perfect for my mango coconut cream dessert! Here's the step-by-step process.
Ingredients needed (just two!):
- 1 mango (or can of mango)
- 1 can of coconut milk
Get a fresh mango when you can. My store didn't have a ready to eat one, so I had to go with a can this time.
Now your coconut milk needs some preparing time. Don't worry, it's nothing difficult. The day before you make this dessert, just make sure to have the can in your fridge with the right side up (the opening side).
Why you ask? We're aiming for just the cream and setting it in the fridge overnight will make the water sink to the bottom, leaving us our precious cream on top.
So you have your can in the fridge! Now let's first start by cutting up the mango. Just make sure you can crush/blend the pieces.
Put the pieces in your blender or your ehm... well the thingy I'm using in the picture, whatever it's called. I found my blender didn't work well blending small amounts, so I have to use this handy little thingy here.
Whatever tool you use, just make sure your mango is blended into mango pulp!
Now get your can of coconut milk out of the fridge. Be sure not to shake it, and keep it right side up. Open up your can and you should see the cream. It does depend on the brand if this works well. This was a new brand for me and it worked out fairly well. I've had worse (no cream at all) and I've had better (over half the can was cream).
Scoop out only the cream and leave the coconut water in the can.
Time to mix/blend again! Now scoop your mango coconut cream in dessert bowls or glasses.
Done!
It's a long post, but that's because of the explanation about the coconut cream. Once you understand that, it's really such an easy (and tasty!) dessert to make.

Edit: To avoid food waste, you could use the leftover coconut water for a nice smoothie!

When I make big amounts, I usually try to store some in the freezer or make it in a week where we get visitors or go visit people ourselves. But when it's something really tasty, I don't always mind if we have to finish it just the two of us ;-)
No, not a bad thing at all and I would say that we try to do the same thing.
I usually cook in larger quantities so that we have options ready to go quickly.
Yeah, that's really handy! Right now, I still have some homemade truffles in the freezer. They hardly need defrosting time, so they're all ready to go!
I don't have a big freezer though, so I do have to always keep that in mind when I want to make stuff. First empty the freezer, then I can make larger things again :-)

There are at least 12 varieties of mangoes available in India during summer and they taste different form one another. You should visit India during summer if you like mangoes.I was talkin about this post in the previous comment.

Didn't know there were so many different ones! I do notice differences in size, depending on the store here, but they are all just called mango.
