Prawn red curry recipe - Okja way

I hope you are having a reasonable day??
Here in the UK we have many gloomy clouds outside and it seems like it's going to rain very soon.
Although I'm wearing long sleeves and trousers which are not summer styles, but I dont mind too much.
I would rather have a cool day than a scorching hot day !

I was thinking about making a rice bowl for tonight's supper but when I smelt curry from my neighbour's flat i had to change my dinner plan. Luckily we bought a bag of frozen king prawns ( they will be ant size after cooking, liars!). So here we are, we are making prawn red curry !

이곳은 여름이 몇일밖에 안되는관계로 지금 긴팔 긴바지를 입고 있습니다.
더운게 얼마나 힘든가를 경험한 저로써는 찌뿌둥한 이날씨가 너무나도 감사할따름입니다.
여러분도 더위드시지 마시고 건강한 여름 나시길 바래요 !
오늘의 저녁계획은 한그릇 밥 저녁 ( 나중에 레시피 나가요) 이였지만
이웃이 커리를 만드는 냄새가 나길래..
저도 바로 저녁메뉴를 바꿨답니다 😎
마침 얼린 새우도 있어서 새우레드커리를 만들어 봤어요 !


INGREDIENTS

Prawn
redcurry paste
any vegetables
Oil
fish sauce
brown sugar
lime
canned chopped tomato x2 (Or 7-8 tomatoes )

First of all, prepare your chosen veggies. I often cook curry to get rid of any leftover veggies in my fridge. Any veggies are welcome! I used one big aubergine, mushrooms, cabbage, potatoes and broccoli.
It's better to chop them into bite sizes but its totally up to you.

우선은 야채를 손질하시면 되는데요. 저는 가끔씩 냉장고에 남은 야채들 처리하기위해 이 커리를 만들곤해요. 그러니 아무 야채나 상관 없답니다. 저는 가지, 양배추, 버섯, 감자 그리고 브로콜리를 썻어요.
작은 한입크기로 잘라주시면 되는데 그냥 맘대로 자르세요.

This is the red curry paste that i used today. I used to make my own curry paste with garlic, ginger, tomato paste etc.. but since I found this paste I can't be bothered to make my own. This paste tastes​ just as good as mine. 😘

이게바로 오늘 쓸 레드커리 패이스트 입니다 !! 한국 카레 가루랑 틀리죵? 이건 여러가지 커리 재료를 믹서로 곱게 갈아서 만든 농축장 이라고 보시면되요. 한국 된장보다 조금더 뻑뻑한 그런 질감이예요.

How much of this paste shall I use??? It's totally up to your taste. If you like your curry to be spicy then add 2 table spoons. I know it's not much but It will give you a good kick. When i used this paste for the first time, I thought that adding 2-3 table spoons this wouldn't do much. Wow, ​that was a big mistake. So take my advice​. I only added one table spoon in the picture and it was just the right amount of heat for us.

이 패이스트를 써보신분들은 아시겠지만 요게.. 좀 매워요. 처음 레드커리를 만들었을떄 이정도야뭘.. 하는 생각에 크게 3숟가락 너었다가 이게 원걸 너무매워 크게 후회한 경험이 있습니다.
그러니 매운걸 원하시는분은 2숟갈 저처럼 온가족이 드실거면 그냥 한숟갈만 넣으시길...

When you have decided how much paste you are going to use, add oil and fry the paste on a medium high heat.
When you fry the paste with oil, it enhances the taste and brings out the aromas. I also added mustard seeds as well.
Honestly​, I don't​ know what mustard seeds do in this dish but I just did it like the other professional chefs do!

레드커리는 오일과 같이 볶아야 향도 나오고 맛도 진해진데요.
그러니 볶아 주시면 돼요. 저는 올리브유를 썻구요. 위에 보이는 노란 씨들은 겨자씨들인데
사실 그냥 있길래 넣었어요.

After 1-2 mins, add aubergine and potatoes​ ( or other hard veggies that need to be cooked longer) and fry together.
1-2분 후에 가지랑 감자를 넣고 같이 볶아요. ( 주로 단단한 채소부터 넣어야해요. )

Once the veggie seems fried enough with the paste, add canned tomatoes ( I only added one can at this stage)
You can replace it with fresh tomatoes but you will need a lot​ of them.

야채들이 어느정도 볶아 졌으면 토마토 통조림을 넣는데요. 영국은 토마토 껍질을 깐 토마토 농축을 슈퍼에서 싸게 팔아요.
이 토마토 통조림이 없다면 그냥 생토마토(큰거 7-8개)를 작게 잘라 넣으시면 되요.

This is how it looks like when you open it.
When the weather is warm, all the contents will become liquid and when its cold, the fat and water will be separated in the can.
코코넛밀크 안의 모습인데요. 이 코코넛밀크는 온도에따라 액체와 고체 상태로 변해요. 더울땐 전체가 다 우유처럼 액체화되지만
지금처럼 쌀쌀하면 이렇게 위에는 고체상태로 변한답니다.

Here is a big tip that you will thank me for later.
Some of you might experience some separation when you add coconut milk in the soup.
It will become like old milk separating from fat and water.
If you add coconut milk when the curry is boiling, it will become separated.
So before adding the coconut milk, bring the heat right down or take the pot away from the heat and wait until it calms down.
Then add the coconut milk.

여기서 중요한 팁나갑니당 !
이 코코넛 밀크를 끓는 커리에 그냥 부으면 코코넛 밀크가 액체에 섞이지 않고 마치 상한 우유처럼 둥둥 떠있어요.
이걸 방지하기 위해서 불을 줄이거나 냄비를 옭겨서 커리가 끓지않는 상테로 만든다음 코코넛 밀크를 부으시면 되요.

Its beautifully mixed well. I added another can of tomatoes and the rest of the soft veggies.
잘 섞였지요?? 저는 토마토 통조림 하나더 넣고 나머지 부드러운 채소들을 넣었어요.

And then I added one table spoon of brown sugar and fish sauce.
그리고 흑설탕과 피쉬소스를 넣었어요. 저생각엔 이 피쉬소스가 없으시면 액젓으로 대채해도 될것같아요.

Once the potatoes are cooked, add broccoli and frozen prawns.
I also added the juice from one lime.
Let it boil for another 5 mins and then it's done !

감자가 익으면 브로콜리와 새우를 넣어요.
저는 라임즙도 넣었답니다.
5분 정도 더 끓이시면 완성 입니다 !

It was tangy sweet along with a little bit of heat, all together. We were all satisfied​ with this meal today.
Next time I will come back with a blog on how to cook rice in a pot !

오~ 요리 잘 하시네요~ 전 영국서 거의 냉동식품 위주. 가끔 닭볶음탕정도 해먹었었는데요~ 쌀은 삶으신거죠?ㅋㅋ 적응 안되던데. 영국사람들은 그냥 물 넉넉히
해서 끓여서 채에 걸르더라구요

저는 요리하는걸 좋아해서 거의 매일 집에서 해먹어요 ^^ 쌀은 그냥 냄비밥한거구요. 영국에서 지내셨었군요 !
저는 영국에서 결혼도했고 일하고 있어요 ^^ 아직 소개에 아무것도 안써놓은것같은데 뭔갈 차츰 써야겠네요 ㅎㅎ
