Playing with balls - Yucca and Potato mix stuffed with Wine-Braised Short Ribs and deep fried - Excellent Diet Food

Okay fine, definitely not a diet food. 😜

Yesterday, I cooked up quite the feast and today I had to figure out what to do with the leftovers, especially all that starchy goodness. While yesterday's meal took a while to prepare, this one took about 30 minutes. Here is yesterday's post, which forms the basis for today's ingredients:

Gather up the items. Try to work while it is all still cold.

The beef short ribs, cut into square chunks while cold

Flour, Eggs, and Breadcrumbs

If you have a deep-fryer, now is a good time to warm it up to about 375 degrees (F).

Grab a chunk of cold yucca and potato mixture and use your finger to poke a decent hole in the middle of you mass. The idea is to stuff some meat in there and form the ball around it:

Once your ball is stuffed and formed, roll it in the flour. Next, dunk it in the scrambled eggs. Now roll it around in some breadcrumbs. Some folks like to double-dip for a crispier shell. I did not and they were still quite tasty.

Make sure they cook evenly and listen for any sudden increase in the sound of the sizzle. This usually means you have a leak and should remove or turn the balls. All that's left to do is enjoy!

This was my first-ever attempt to make something like this. Truly a delicious success!

By the way, if you read my first post, I mentioned using the leftover "gravy" to make a rich meat sauce for pasta. We did exactly that today and it was a hit! Here's a picture:
