Buddha bowl 🍚🥗 | BEST TOFU EVER – very easy to make

Hi beautiful people out there! Are you ready for another one of my buddha bowls? Sorry guys, I just love them with all my hearth and can’t get enough of them.

In this buddha bowl we have:

  • bell pepper onion rice
  • crunchy tofu
  • beans in tomato sauce
  • broccoli
  • lamb’s lettuce

I think I finally came across the most perfect and at the same time fastest way to make tofu. I simply pan-fried tofu and after it was nice and crunchy removed it from heat and added soy sauce, left it in a pan for just a few minutes so the soy sauce soaked into tofu. And here we have it guys – the best crunchy tofu you’ll ever try! You want to use extra firm tofu for this to work otherwise it will be soggy and not crunchy at all.

I shared my recipe for onion fried rice not too long ago and today I took it to the next level by adding bell pepper as well. Even if you are not a fan of rice, I highly encourage you guys to try this. Onion and pepper completely change the flavor of it! If you are bored of the good old plain rice this is a nice switch-up.

Recipe | Buddha bowl 🍚🥗


- Onion Pepper Rice

Ingredients:


• 200 g rice
• 2 bell peppers
• 1 onion
• 1 tsp coconut oil
• ½ tsp salt
• 1 tbsp smoked paprika

Method:


1/ Cut onion and bell pepper. Add to a medium sized pot along with coconut oil and pan-fry until onions are nicely caramelized.
2/ Add rice and spices. Mix and add water.
3/ Bring to boil and cook for 15-20 minutes, depends on type of rice you use.


- Tofu

Ingredients:


• 1 block tofu
• 4 tbsp soy sauce

Method:


1/ Cut tofu into squares. Add to a pan and pan-fry until tofu is crunchy and evenly ‘baked’ on all sides.
2/ Remove from heat and add soy sauce. Be careful you don’t burn the sauce. Mix until tofu is evenly coated. Let it sit in the pan for a few minutes so the soy sauce soaks into tofu.


- Beans in tomato sauce

Ingredients:


• 1 cup beans
• 1 cup tomato sauce
• 1 tbsp curry powder

Method:


1/ In a pan add beans, tomato sauce and curry powder. Stir and bring the sauce to a boil. Boil until sauce gets to desired consistency, then stir.


- Assembling

  • In a serving bowl add some rice, tofu, beans, lamb’s lettuce and boiled broccoli. Dig in and enjoy!
