Steemit Appetizer-Kinilaw na Bolinao

Greetings of freshness steem buddies! Today lets have another fresh start of the day by having something fresh in our mouth its "Kinilaw nga Bolinao"!

Our place is bless by sea bounty of fresh catch from the seas of Cordova and its neighboring islands. One of the common delicacy in our place is "Kinilaw" is a Visayan word which means to be eaten raw which utilizes vinegar to cook the fish. This dish is serve without cooking through fire or heating. Since its eaten raw it is really important that the fish is fresh. Freshness of the fish is a testament of sweet and flavorful taste of the Kinilaw.

There are a lot of fish that can be use for our "Kinilaw" common variety of fish are Danguit, Tangigue, Barungoy, Ibis, Bolinao and whole lot more. Today, we will have " Kinilaw na Bolinao" the fish is a fresh catch of our neighbor fisherman. I'am lucky enough that he give me some for our lunch. Anyway lets move on and know how to do this dish.
The dish is simple yet very tasky especially on cleaning the fish. We need to make sure that the fish is super clean.

We have the following ingredients for Kinilaw na Bolinao:

Bolinao (fresh)
ginger
Calamansi juice
Chili pepper
onion
tomato
salt and pepper to taste
cucumber (optional)

Procedure

  1. Clean the fish, remove the intestines, head and bones of the fish.
  2. Wash and clean the herbs and spices
  3. Slice the herbs and spices to desired shape and sizes
  4. Mix all the ingredients, add the vinegar and calamansi juice with chili pepper.
  5. Finally, add salt and pepper to taste.

Thats it steem buddies, we have now our "kinilaw na bolinao." This dish is also great as "pulutan." Prepare a lot of rice...hehehe you will need it! Till next time steem buddies for another food trip. More power and enjoy eating!
