VIETNAM FOOD #2: Vietnamese Crispy Dumplings (Recipe)

My name’s Ngoc Bich (it means Jade in English). Today I make the Vietnamese Crispy Dumplings, which is Vietnam traditional food. and this is the first time I make it!

INGREDIENTS:
For the wrapper:

  • 250g all-purpose flour,
  • 20g sticky rice flour
  • 30g cooking oil,
  • 20g rice flour
  • 1tsp of sugar,
  • ¼ tsp turmeric powder,
  • 1 egg yolk
  • hot water.

For sauces and vegetables:

  • Cucumber
  • Carrot,
  • Salt, sugar, pepper, fish sauce, sugar, lemon, chili and boiled water.

For the filling:

  • Minced pork,
  • Vermicelli/ glass noodle soaked in warm water 10 mins and chopped,
  • Woodear mushroom soaked in warm water 10 mins and minced
  • Carrot, pepper, salt, dried scallion,
  • Boiled eggs.

Method:

  • Soak glass noodle in hot water and boil 3 chicken eggs
  • To make the wrapper, I combine flour, sticky rice flour, rice flour, sugar, turmeric powder, cooking oil, 1 egg yolk, and hot water in a large bowl. Mix well to form a dough. Cover and let it rest for 30 minutes.

During the rest time dough, I make the carrots and cucumbers pickled.

  • Peel carrots and cucumbers, remove cucumber guts. Cut carrot and cucumber into thin pieces about 3-4cm long. Add the salt, sugar, pepper and lemon juice and mix well and leave for about 20 minutes.

Next, I make the filling:

  • Chop carrots into a bowl, cut the boiled eggs into 4 parts, chopped Wood-ear mushroom soaked in warm water, glass noodle soaked in warm water 10 mins and chopped, chopped dry scallion.

  • Combine minced pork with minced carrot, glass noodle, dry scallion and wood-ear mushroom. Add the salt, pepper and mix well.

  • Divide the dough into small pieces and then make thin and use a round mold to cut (if no round mold can take the cup). Place a spoonful of the filling in the center of the wrapper and egg on top. Fold in half to form a half-moon shape. Fold as demonstrated in the video.

Bring to fry in oil, Deep-fry the dumplings till golden brown, then remove oil to drain and put on the plate.

  • Make sauce: Sauces are made with a ratio of 1 fish sauce 2 water, 2 sugar and ½ lemon and chopped chilli. Then pick up the pickled carrots and cucumbers into the bowl of fish sauce mixed.
    Enjoy: Cut the cake and eat with sauce, served with a slice of carrot or cucumber. Taste is great!
