VIETNAM FOOD # 1: Snail crispy spring rolls Recipe and behind the scenes
Hi everyone
Today I make Snail crispy spring rolls, which is a dish with cultural style of Hanoians
Ingredients:
- 200g minced pork
- 200g snail
- Carrot shredded
- 20 g dried wood ear mushrooms soaked in hot water
- 50 g glass noodle
- 1 tbsp chili peppers minced
- 1 tbsp garlic minced
- 2 eggs
- 20 pcs rice paper wrapper
- 20 piper lolot leaves
- Perilla leaves, Saw-Leaf Herb, Scallion
- Fish sauce, sugar
Method:
Step 1: Glass noodle soaked in water for 10 mins, I shredded vegetables, mushrooms, glass noodle, and snail.
Step 2: In a large bowl, I combine the minced meat with the shredded snail, all the shredded vegetables, mushrooms and glass noodle, add 2 eggs, and salt. Mix well to help all the ingredients adhere better.
To soften the rice paper for wrapping, moisten the rice paper with a slice tomato soaking in water.
Step 3: Scoop a heaping tablespoon of the filling and put on the piper lolot leaves, near one end of the rice paper. Roll until it reach the center, then fold both sides inwards and continue to roll up till the other end.
Step 4: Heat oil in the pan until you see small bubbles around the chopstick. Then keep the heat on medium and start frying. Deep fry until they turn golden brown.
For the sauce, I mix the ratio of 1 fish sauce 2 water 2 sugar and ½ lemon with garlic and chili peppers!
And so I finished the delicious Snail crispy spring rolls!
