THE EASIEST STRAWBERRY BIRTHDAY CAKE🍓🍰

In Poland June is a strawberry month. The only period of time when we can get them fresh, so we buy them literally in kilograms and buckets. Having birthday in June, it was obvious that my birthday cake would be always full of strawberries. Which I didn’t mind, as I have always loved them.

Even though in the UK I can get strawberries all year around and even if I want the fresh ones, they are available a good few months, I am still continuing my tradition and June is special month due to that.

Probably subconsciously, I still think that we may run out of strawberries soon so that’s why I buy them whenever I can.

Which is funny, I know but can you win with your subconsciousness!

This birthday cake I did for the first time and not only I was pleased, but all my guests.

It is easy to do, but above all – not too fatty, not too weighty, not too sweet - just perfectly.

Recipe comes from my favourite polish baking blog, mojewypieki.com.

If you also like strawberries, this is the best time to try this cake out 😊

Sponge Cake

Ingredients:

✔️ 6 eggs
✔️ ¾ cup of caster su gar
✔️ ¾ cup + 2tbs of plain flour
✔️ ¼ cup + 1 tbs of potato flour (starch)

All ingredients should be in room temperature.

Separate the white eggs from the yolks, beat them to a stiff foam.
At the end of whipping, gradually add sugar. Gradually - spoon by spoon, while whisking.
Add yolks one by one, still whisking.
Mix flour and starch, sift and gently stir into the dough using a spatula.

A cake tin with a diameter of 24 cm array with baking paper.
Do not grease the sides of the mold with anything and put the paper only on the bottom.
Put a dough into the mold, align.
Bake at 160 - 170ºC about 40 minutes or longer, to the so-called dry stick.

Remove the hot cake from the oven, leave it (in the form) from the height of about 30 cm to the floor. Set aside to the kitchen counter to cool down.
Remove from the mold.
Cut the cake into 3 tops.

Note: sides of the sponge cake should be separated with a knife from the mold only once the sponge cake has cooled down.

Punch

Ingredients:

✔️ 1 cup of strawberries
✔️ 1,5 cup of water
✔️ 3 tbs of sugar

Cook a strawberry juice: steem the strawberries and cover with cold water.
Add sugar and stir.
Cook only until starts boiling, then take off from the heat and leave to cold down.
Then drain off.

Cream layer

Ingredients:

✔️ 400 ml whipping cream, chilled
✔️ 500 g mascarpone, chilled
✔️ 5 full tbs icing sugar (or more, to get your preferred taste)
✔️ 1 tsp vanilla bean paste / seeds from 1 vanilla pod / 1tsp vanilla extract

Whipping cream, mascarpone, vanilla and icing sugar put in a mixing bowl.
Whip until you get thick and stiff cream.

Additionaly:

✔️ 1 kg fresh strawberries, cut in halves

Instructions - Strawberry Birthday Cake :

Put one of the prepared cake tops on the cake stand. Spoon ½ strawberry juice over top.
Put 1/3 of the cream layer over it and then put evenly chopped strawberries.
Put the next top of the cake and soak with another ½ of strawberry juice.
Put 1/3 of the cream layer, layer of strawberries and cover with the last cake top.
Finish with the rest of the juice.
Top and sides of the cake smear with leftover cream layer.

Decorate sides of the cake as you like.
I have covered it with almond flakes, fresh strawberries and roasted hazelnuts.

Let it chill in the fridge for a few hours.

dzieki! pierwsze kontkretne zdjecia na tle fotograficznym, a Wojti za sterami jesli chodzi o dopieszczenie zdjec 😀duża radocha z tego wszystkiego wychchodzi. choć największa chyba dla tych, co jedzą 😜

Ja nie mam aparatu musze tel robic

jak na telefon bardzo dobre zdjęcia, naprawdę :) czasem sprzęt nie jest tak istotny - niektórzy producenci do kręcenie używają iphone'ów, słyszałam nawet o jednym, który w 100% powstał nakręcony przez iphone ;)
