30 MIN ALMOND CURRY YOU WILL LOVE TO BITS

Right. As we started from basics, how to cook a rice, let's move on to the next step and prepare dish which includes the rice.

If you like chicken, coconut milk or almonds I guarantee that you will absolutely love it 😃

The secret of the recipe is in front of your eyes - almonds. Chopped and fried, add extraordinary taste to the curry.

The great flavour comes also from frying onion on coconut oil (but only organic extra virigine, as other will be tasteless).

And let's be honest - coconut milke does here a great job too, by making it more creamy and delicate.

So if you like the above ingredients but are not a fan of spicy food, this is a perfect meal for you.

So, without further ado, lest's have look at the recipe 🙂

ALMOND CURRY

4 serves | 30 min

Ingredients

To the dish:
✅ 1 cup of basmati rice
✅ 2 onions
✅ 2 garlic cloves
✅ 1 tbs powdered curry/turmeric
✅ 2 tbs almond flakes
✅ 400 g chicken fillets
✅ 200 ml coconut milk

For decoration:
✅ fresh corriander
✅ 1 tbs almond flakes

Other ingredients:
✅ coconut oil
✅ salt

Instructions

  1. Cook rice according to the directions on packaging or your own proven method.
    For directions how to cook the perfect rice go to How to cook The Perfect Rice.
  2. Dice onions and put garlic through the garlic press. Put on the non-stick pan and fry on 3 tbs of coconut oil with turmeric or curry powder.
  3. Cut chicken breasts into thin slices and put on the pan. Fry for around 8 mins, until golden.
  4. Add mixed almond flakes (you can simply crush them in hand). Add coconut milk and braise on the low heat for next 5 mins.
  5. Roast 1 tbs of almond flakes on separate frying pan for around 2-3 mins (without oil on).
  6. Add salt and other spices of your choice.

Serve curry with rice.

Decorate with fresh corriander and roasted almond flakes.
