Hello friends,
Today I am going to share with you my all time favourite biryani recipe,yes it's egg dam biryani. Believe me friends it is 101% delicious and flavorful biryani. Try this recipe from my way I promise you you will never get disappointed. So let's see the recipe
★So first we want to prepare 80% cooked rice★
For the rice preparation we want
1)- Basmati rice -250 gm (soaked for 1 hour)
2)- Oil- 2tsp
3)- Solt- 1 tbsp
4)- lemon juice- 1tsp
5)- Bay leaves- 4
6)- Cinnamon sticks- 2
7)- Black papercorn-6
8)- Cloves-6
9)- Green cardamom-3
10)- Black cardamom- 2
11)- Shahi jeera - 1 tsp
★Method of rice making★
★ Heat up 2tsp oil in a big pot. Add bay leaves, cinnamon sticks, green and black cardamom, cloves,shahi jeera (cumin seeds)
★Fry only 2,3 Seconds and quickly add 4 glass
of water in that pan and add 1tbsp solt and 1tsp lemon juice
★ Bring it to boil. Add soaked rice in boiling water. Boil the rice for five minutes on high flame untill rice is 70%,80% cooked
★Remove the whole water from rice with the help of any stainer and keep it a side
★Next We want 8 boiled and shallow fried eggs
Cut the eggs in to half
Shallow fry the eggs with 1/2tsp red chilli,1/2tsp turmeric powder,1/2tsp solt
★Now we want crispy fried onion★
★ Ingredients for gravy (masala)★
1)- Onion chopped- 2cups
2)-Tomato chopped - 1cup
3)- Ginger garlic paste- 3tsp
4)- Curd - 1 cup
5)- Lemon juice- 1tsp
6)- Coriander powder- 1tsp
7)- Cumin seeds powder-1tsp(roasted)
8)- Red chilli powder- 1tsp
9)- turmeric powder -1/2tsp
10)- Asafoetida-1/4tsp
11)- Garam masala- 1tsp
12)- Everest biryani masala- 2 tsp
13)- Oil -1cup
14)- Coriander chopped- 1cup
15)- Meant leaves chopped-1cup
16)- Kasuri methi- 2tsp(dry fenugreek)
17)- Saffron/food colour (optional)
18)- Solt - 1tsp

★Method for making biryani gravy base★
★ Take a heavy bottom pan and heat up one cup oil
When oil gets heat up add chopped onion and fry them till they gets light brown colour
★Add chopped tomatos, Ginger garlic paste and fry them well for two to three minutes on medium flame
★Add one cup curd in to the pan and mix well with other masala.
★ Then add all dry ingredients like red chilli powder, turmeric powder, asafoetida, coriander powder, cumin seeds powder, Everest biryani masala, Kasuri methi(fenugreek powder)and solt etc.mix well and fry for two minutes
★Then add chopped coriander and meant leaves and one tsp lemon juice.
★ then add shallow fried eggs and mix with all masala. mix gently
★now add half cup of water in gravy and layer the cooked rice on egg gravy
★ Garnish with fried onion and chopped coriander and chopped meant leaves.
★Cover the pan and let them cook for 20 minutes on low flame
★After 20 minutes delicious egg dam biryani ready to serve
★Serve with cucumber and curd salad (rayta)
