Chicken Schnitzel and Rice

I wanted to post about my mother-in-law's chicken schnitzel because
a) it's awesome when I don't have to cook my own dinner
b) this is my favourite thing that she cooks

It's not so much the schnitzel itself (although it does it's own merit) it's the rice that goes with it - once the schnitzel has all been cooked, she stirs steamed rice through the pan to collect all the left over oil and breadcrumbs from the meat, add a can of corn just to freshen it up a bit (I like to add parsley sometimes too) and it gives the rice a gentle crunchy texture that I haven't seen anyone else do before.

If anyone knows of anything similar please feel free to comment below, I'd love to see if anyone else out there does this.
