I think that food trucks are great! There are starting to be more of them in my town. I see it as a sign of the changing times when it comes to business. A restaurant is extremely expensive with overhead costs. While there are still significant expenses with food trucks, they are nowhere near as prohibitive as the costs of a physical restaurant building and staff.

My neighbor owns a food truck and that's her full time work. It's a great opportunity for people who are independent, like food and work hard.
