Chocolate & Oats Cookies | Refined sugar free & gluten free | Recipe
Ok people, let’s talk about cookies. We all love cookies, and the more chocolatey and decadent they are, the better is! If I think about comfort food, warm cookies and a cold glass of milk spring to my mind. Problem is, as you probably already know but try to forget at any cost, cookies are made with lots of sugar and butter and very little of anything else, and if you’re on a diet or if you're trying to eat healthier (you know, cut the sugar, cut the sat fats etc) cookies are an inviting forbidden treat you cannot indulge on a regular basis. Really, really sad, I know. But, as a woman always on a diet, always trying to eat clean (I said TRYING, no saint here) I’ve tried for years - no kidding - to develop the perfect healthy cookies recipe.
I wanted a recipe low in sugar, high in protein and fiber, and, if not low fat, at least without tons of butter. And I finally made it. These cookies are deliciously crispy and crunchy on the edges and incredibly satisfying: two or three cookies with some cold milk (even plant based!) is a perfect snack and will keep you full until dinner!
And it’s even gluten free, so my gluten intolerant friend who live next to me can enjoy my chocolate &oats cookies too!
Ingredients
100 grams gluten-free oats
50 grams almond flour
50 grams soy flour
30 grams coconut flour
30 grams rice flour
2 eggs
50 ml maple syrup
50 grams coconut butte
60 grams dark chocolate chips
1 tsp baking soda
1 tsp vanilla essence or 1 vanilla pods
fleur du sal or coarse-ground salt
Instructions
- Preheat the oven at 180 degrees
- Mix all the ingredients in a bowl except for the salt
- Form 25 balls of about 20 gr each
- With your hands carefully shape the side of the balls to smooth the cracks that will form
- Arrange the cookies on a baking sheet covered with baking paper and sprinkle some freshly ground salt on the top
- Bake the cookies for 15 minutes
- Let them cool completely and store in air-tight container
Notes
The dough will be a bit 'difficult to work with, you must be patient, it will tend to fall apart but using fingers and palm of your hands you should be able to get well shaped cookies
