On new years day, what is better than potato chips and ketchup. This is an easy recipe, that preserves the potato taste better, compared to deepfried potato chips. The cost is less crispyness. The spices can be varied according to taste and use. It works equally well with a nice steak, as with a burger. It is a quick and easy way to create great tasting potatoes in the everyday kitchen.

Ingredients:

  • 1 kg Potatos
  • 2-3 Cloves of Garlic
  • 1-2 Bayleaves
  • Olive oil (or other type oil, butter etc.)
  • Dried Thyme
  • Sweet Paprica
  • White wine vinegar
  • Salt
  • Pepper

Preheat the oven at ca. 200 degr C. Cut the potatos (medium sized preferably) up in any chip shape you fancy, just keep them in a good size, not too thin and not too thick. Rinse them in cold running water in a colander and let them drip dry, to make sure that all dirt has been cleaned off and getting rid of water.

Throw them in a big square pan that keeps a large surface to enable even heating, when they are spread out. Squash a few garlics and throw in. Break a few bayleafs and throw in. Sprinkle with a good deal of thyme and drizzle on a little paprica. Throw in a couple of serious pinches of salt and grind a little pepper. Pour a good amount of oil over it and add a few squirts of vinegar.

Mix with your hands until all is well coated... and enjoy the smell meanwhile. Let it rest for a few minutes to let the flavours work. Kick it in the oven when ready and let them bake for ca. 40 mins. You may wanne stir them around once or twice along the way.

Serve with a good ketchup, salsa, remoulade or mayo to your liking :-)

As curiosity i can add, that on the faroe islands, when you order french fries, they add vinegar. Only place i have tried that.

And they add pickled red cabbage on their hotdogs... but thats another story :-)

Really! Pickled cabbage on hotdog doesn't sound bad at all!
In Britain I've had malt vinegar with the fries a lot of times, it's really nice. Almost all dishes are boring without at least some acidity.

No the cabbage is a traditional thing in many danish dishes, like frikadeller (köttbullar). On hotdogs is better than it sounds :-)
Absolutely. Acidity is a very overlooked "spice" in most peoples cooking. I use any opportunity to get it acidicized :-)... In a cook book from a famous danish beach resort hotel, it says " lemon is what destroys the food, if not added " :-)
