Such a healthy post...It is also good for the heart....and a good source of fiber....We cook it here with bones stewed together....such a hearty food...

The way we eat red beans is to boil them slow for hours with few pieces of dried rind until the beans are all broken up. Just add sugar to taste and serve a sweet. If you cook the beans further you can drain them and then make into a paste for the fillings of buns or waffle.
