Good and cheap. Make an eggplant parmesan over a pasta or and alfredo pasta with grilled eggplant with parmesan cheese over the top. Great meaty veggie.

    That sounds really yummy. I've had some people say they would recommend eggplant parm. I need to look up how to do it.
