Recipe Lumpia Semarang, typical spring roll from Semarang, capital of Central Java, Indonesia

I believe that people are already familiar with spring roll, because it's a kind of signature dish from many different countries in Southeast Asia and in China. The filling is various and all are very tasty, including the vegetarian one.

Somehow, up to now I can only find springroll with bambu shoots filling in Semarang, Central Java-Indonesia.

It has a different taste compare to the other kind of spring roll I've ever known from another countries, so I can only cook it my self if I miss this kind of spring roll, the typical dish of my hometown.

There is no asian restaurant here in my state selling this type of spring roll:

In order to make Lumpia Semarang we would need following ingredients:

  •  spring roll wrappers (one can buy it in asia shops or asian online shop)
  •  2 tablespoon wheat flour
  •  1 tablespoon water

Filling:

  •   3 cloves garlic (finely chopped)
  •   50 gram shrimp (finely chopped. Just skip it, if you want to make it vegetarian)
  •   50 gram chicken filet (minced, skip it as well for vegetarian style)
  •   2 Eggs
  •   2 stalks scallion, finely chopped
  •   1 table spoon Oyster sauce
  •   1 tsp sesame oil
  • 1 tablespoon Kecap Manis (dark and sweet soy sauce).

This is typical indonesian style of soy sauce.
So if possible we should buy the indonesian brand if we really want to get the authentic taste of Lumpia Semarang.

This one is my favourite indonesian soy sauce:


  • 200 gram bamboo shoots.
    Julienne them if you buy the bambo shoots in a whole form.                

  •   1/2 tsp salt
  •   1/4 tsp pepper
  •   1/2 tsp sugar
  •   2 tablespoon oil (sunflower oil or rapeseed oil).

You can add another 50 gram of julienned carrot if you like as a subtitute for shrimp and chicken fillet.

Instruction:
Sautee the garlic and chopped scallion with the rapeseed oil until it's getting fragrant. After that add the shrimp and chicken fillet (if you like).
But if you want to make vegetarian spring roll, then you can skip this part and add directly the bamboo shoots and the carrots. And then come the eggs. Mix and stir it well until the eggs are completely cooked.

Add the pepper, salt, sugar, sesame oil, sweet soy sauce and oyster sauce. The last one is a table spoon of water and flour. Turn off the stove and let it cool down.
After it's cooled we can start rolling it up.
Take a spring roll wrapper and put a table spoon of filling on the corner of the wrapper. Flip the head part to cover the filling and then the left and the side corner of the wrapper. After that, just roll it up till the end of the wrapper.
Glue the end corner of the wrapper to the spring roll body with eggwhite or a mixture of flour and water.
After all filling is used up then we can deep fry all the spring roll until it has a slightly brown colour.

The Lumpia Semarang are ready to serve with some Thai bird eye chilis or any kind of sauce that we like.

Lumpia is one of my favourite snack. The difficult part to make them is actually only to create the wrapper. But since we can simply buy the ready use one at any asian shops, so it's rather easy and fast. Btw, if you can't find Kecap manis, then just add a bit more sugar to the filling. That should be ok.

The wrapper does indeed seem like the hardest part.
Kecap manis is easy to come by here luckily. I also use it in my tomato soup, which makes it taste so much better.

Ooh that's great! Yeah, I've been messing around with recipes a lot last year. It's so much fun to cook and bake. It's also quite relaxing :-)
