Bread Boats aka Adjaruli Kchachapuri

When I think of Georgian food kchachapuri is always a number one thought of mine. This cheesy bread is served nearly everywhere in Georgia in various forms and shapes. It can be filled with cheese, and meat like a calzone or flat with ingredients on top of it. The dough can be made of puff pastry or be similar to that of bread. Even the method of cooking can change from baked to fried on a pan. The only thing that is always there is cheese that when molten can stretch like strings. So basically it is make it how you like it kind of food. 😊 The one I made below is called adjaruli that is the dough in a shape of a boat with egg cracked on top with the pizza-like dough.

Ingredients (make 5): 

  • 3 cups of flour 
  • 100g of fresh yeast or 14g of dry yeast 
  • 1.5 cup of water 
  • ½ tsp of salt 
  • ½ tsp of sugar 
  • 1-2 tbsp of olive oil 
  • cheese 
  • Svaneti Salt – Georgian spices that are made in every household and are used in basically every dish (If you want to know how to make it, let me know in the comments) 
  • Eggs    

Recipe: 

1. Prepare the dough similar to that of a pizza dough. Dissolve yeast and sugar in warm water and after the yeast start to spread bubbles, knead the dough until it doesn’t stick to the fingers anymore. Then divide it into 5 parts and let it double under a wet towel. 

2. In the meantime, grate the cheese and mix it if you use different type of cheese . 

3. Roll out each dough ball, fold the edges in a shape of a boat and place the cheese ball in the middle.

4. Bake for 15-20 minutes at 220oC. Then take the boats out of the oven, crack an egg on top of cheese sprinkle with Svaneti Salt. The heat from cheese and bread will cook the egg white leaving the yolk runny but if you want your egg to be fully cooked then put the bread bowl back in the oven, until egg white sets and is nice and white).

What is the taste of this bread? With the egg its almost not cook..halfcook

The egg is cooking with the steam and with heat from the freshly baked bread so the yolk is runny but the white is cooking on your plate. I know that some people prefer to have the egg not runny and in this case I recommend baking the whole thing with cracked egg for couple more minutes. The taste is like a grilled cheese sandwich with pouched egg, and the Svaneti Salt adds additional flavor to it. I really like it :)

Ok that looks delicious. But on a completely different note - when I saw your username I was almost expecting posts about crypo/stock trading or poker/gambling.

Knit is a term in all the above, meaning too risk adverse, play it safe, etc etc.
