BBQ as fine dining, why not!

Most people see barbequeing as a social event, but quite often they dont pay enough attention to the quality of the food. Its more about the feeling of the barbeque, together with friends and family. Having a good time and not so much about the food.

We decided to try something different this week. Inspired by David Changs 'Ugly Delicious' episode about barbeque food, we decided to go a little more on the sophisticated tour on smoked food. So not ribs and chicken, but langoustines, Tbone steak and fresh veggies.

As always preparation is key !

We started with marinating the langoustines in oliveoil, lemonjuice, lemon peel, lime peel, gingerslices and garlic.

Let the Tbone steak get on room temperature, rub it in with salt, pepper, cajun and a bit of jerk.

I hear you thinking, what about the sigar??

The sigar we used it for the smoking flavor.

We crumbled the sigar into an oven dish and sprinkeled red port over it. The leaves of the sigar should soak in the red port for at least half an hour.

We also braised some brussel sprouts in vegetable stock for about 10 minutes, and cut a zucchini in half. Both of these we put in a tin foil tray we folded ourselves. We sprinkled the zucchini with olive oil, salt and pepper.

Fire in the hole!!

Make sure your BBQ is ridiculouly hot. As in above 250 degrees Celsius. The Tbone goes directly on the fire to give it the nice roast stripe and to sear the outside. The langoustines needed only about 15 seconds on the fire. They were cooked already when we bought them.
After that you can leave these on the side as you see with the other ingredients.

Then we put the ovendish with the sigar-red port mix on the fire and close the hood. Only the smoke flavor that comes off will go into the food.

Leave the veggies up high and dry in the smoke, just for the extra flavor.

We cut the Tbone in small little slices once it was finished. The langoustines were ready to suck out and the veggies were perfect.

What is always a pity is that bbq food does not look so pretty on pictures. The taste of all of these ingredients were so delicious, a crappy photo would not do the flavor any justice. (And I didnt make any because I was too busy eating with my hands hahaha)

A nice light Maroccan wine accompanied this food that was already heavy in flavor.

And with a sunset like this, what could go wrong actually, nothing right?? It was a perfect day for a fine dining BBQ!!

That looks more than nice. It looks delicious! That T-bone and those Brussel sprouts!! And the weather looks great also. I never heard of the trick with the cigar. I am curious to know what one of the @blockbrothers would say about this. I mean @s3rg3, he loves to smoke cigars!

Heheheh bring it on @s3erg3 I dare you to give it a try :) (I hope he sees this now).. sigar leaves and red port getting the smoke in the food. I feel a blog from Holland coming in very soon ;)))

It was so chill @clio . The weather is perfect at the moment, not to hot and hardly any wind. And imagine, a nice BBQ just on a random wednesday evening with the man... I feel blessed

I never tried roasting a cigar...I rather smoke them but I will try this and let you know what I think of it!

Smoking cigars is what I prefer but hey,...always fun to try new things. Will try this at least once this summer!

You guys need some summer there as well to get the bbq out again. (It does help to have a BF who is a professional chef for the nitty gritty details on all of these things )

Smoke can give anything so much flavor! I Love to bbq!! This was an experiment that ended really good to be honest :))
