Tapioca is actually used as a dessert in a lot of Asian countries, normally as a rice cake of sorts, drizzled over with coconut milk and accompanied by a sweet-sour fruit - mangos most commonly. It is EXCEPTIONAL!
It's interesting to see a western twist on it actually and I'd love to try this recipe for a savoury version!
