Melt in your mouth Pork Tenderloin...

I have officially found the most delicious and simple pork fillet recipe on planet earth! I have made it twice now and it has been just out of this world amazing on both occasions... so much so that even my little man has climbed into seconds both times. The creamy mash and bok Choi were also the perfect accompaniments.

You simply roll the fillet in some salt and pepper and then sear it in a pan with a little olive oil. Remove it and then place it in some open foil. Top it with a mix of herbs, Garlic and a few sticks of butter, close it up and cook it for 25 minutes at 175 degrees Celsius. The seasoning consists of: one teaspoon of each of the following: garlic, thyme, sweet basil, oregano, parsley. Once cooked, let it rest for 5 minutes before serving, which is just enough time to prepare the bok Choi which you literally just boil for one minute in water. You can slice a little bit of the base off if you want but I know some people prefer not to.

I have found that with sweet potato mash it is best to strain it after cooking and then leave it to cool completely before adding the butter, cream and seasoning. I then use a hand blender to get it to a nice smooth consistency and have found that doing it this way gives you a much firmer result, closer resembling traditional mash.

thanks for this recommendation @kendra19

I have not met this recipe for cooking meat, and I think I will repeat it)) but I'll take another dish. Boiled potatoes I think))

Love pork tenderloin! Your recipe is simple but the results look so appetizing. I've gotta have some of this!

Sounds like a great recipe and the pictures are lovely. Great angles!

In summer, do this quickly on the braai - the smoky flavour will just add to it... :D

I definitely shall try this 😋😋your presentation of the dish make me want to try it immediately 😜

omg @jaynie ! this looks sooo epic, gonna make it this very week! I think I would just add some garlic cloves and sage leaves to the pan when frying... only alteration I can think of, everything looks perfect ! will post pics once I've cooked this x

It is indeed divine!

What frying are you referring to though? The sealing of the pork?

yes, in the searing stage, garlic, and sage, and also the sage inside the foil in the oven.

hahaha!!! I might look like that after the copious amounts of mac 'n cheese I just ate haha!!!

A sage lover, is a unique individual. It is an aroma & flavour many cannot stomach. Good call! I love sage!

Oh my word @jaynie, this looks scrumptuous! We loooooove tenderloin and of course mashed potatoes, no wonder the little one wanted seconds! Beautiful presentation, truly a lovely meal :) Your pictures are perfect!
