Coffee Banana Crumb Cake - Recipe and Food Photos

Over-ripe bananas were begging to be made into banana bread.

Add coffee, streusel (a.k.a. crumb), and a quick and easy recipe... Coffee banana crumb cake anyone?!

This cake could work for breakfast with your coffee, or afternoon tea (if you do that), or even for dessert. It's really easy to throw together and bake off, but it won't be easy to keep it around for long.

I used a 50/50 mix of all purpose and whole wheat flour, but the flavor and texture are so great that you would never know. It's sweet but not too sweet, and the combination of coffee and cinnamon in this banana bread make it something special. The streusel is what makes it a crumb cake, and I mean, you can't really go wrong with crumbly streusel can you? The simplest of icings gets drizzled (or dolloped) over the top once the cake is cooled.

Coffee banana crumb cake

Serves 12-16
Prep: 15 minutes
Cook: 45 minutes

Ingredients
Coffee Banana Cake

  • 1 c all purpose flour
  • 1 c whole wheat flour
  • 1 T baking soda
  • 1 t salt
  • 1 T cinnamon
  • 2 eggs
  • 4 over-ripe bananas
  • 2 t vanilla
  • 3/4 c sugar
  • 1 c strong brewed coffee
  • 1/2 c butter at room temperature

Crumb

  • 1/2 c cold butter
  • 1 c brown sugar
  • 1 c all purpose flour
  • 1/2 c whole wheat flour
  • 1 t cinnamon

Glaze

  • 1 c powdered sugar
  • 1 t vanilla
  • 1/4 c milk (or coffee)

Directions
Preheat your oven to 350°F

  • Combine the ingredients for the crumb and use a pastry cutter (or your hands) to work the butter and other crumb ingredients into small crumbles (like grains of rice). Set aside.
  • For the cake, combine the flours, baking powder, and salt in a medium bowl.
  • In your blender or food processor, blend the eggs, bananas, vanilla, sugar, coffee, and butter, until smooth.
  • Add the wet cake ingredients to the dry cake ingredients and mix until combined.
  • In a greased 8 x 13 inch pan, pour 1/3 of thecake mixture, followed by half of the streusel mix, the remaining 2/3 of the cake mixture, and top with the remaining 1/2 of the streusel mixture.
  • Bake until a toothpick comes out clean, about 45 minutes to 1 hour.
  • While the crumb cake is in the oven, combine the ingredients for the glaze.
  • Wait until the crumb cake cools before you drizzle the glaze over it.
