Drunken Mussels
These mussels are so good. The broth goes well with crusty bread.
Ingredients:
1/4 Cup Butter
1 cup Onion, finely chopped
1/3 Cup Green Onion
4 Garlic cloves, minced
4 Tomatoes blanched, Peeled and seeded
1 Cup White wine
3 Cups Chicken stock or Vegetable stock
1/2 Cup finely chopped fresh Parsley leaves
5lbs Mussels, well scrubbed and debearded
Salt and Pepper to taste
DIRECTIONS
In a large pot big enough to hold Mussels. Melt the butter.
Add the onions, salt, and pepper.Stir
Add Tomatoes, garlic and cook, stir
Add the wine, parsley, and bring to a boil.
Add the mussels, cover, and cook until the shells have opened, about 4 minutes.
Remove from the heat and discard any shells that do not open.
serve immediately.
Warm a baguette in the oven, for dipping.
