Croissant 可颂面包

A cup of milk or coffee plus croissant, is a common French breakfast. It has a history of more than 300 years, now the butter bread comes from the croissant. It is also a symbol of French tradition and culture. Taste salty sweet, crisp and delicious. So I'd like to share with you the attractive croissant. Hope you like it. Since it is not easy to do it well, and giving some advice is always welcome.

Ingredients:

strong flour 185g
Low-gluten flour 63g
yeast 4g
milk 145g
salt 5g
sugar 25g
butter 140g

Method:

Mix all the ingredients except the butter and knead a dough and ferment for 30 minutes .

take the fermented dough and roll it out using a roling pin .

put a large piece of butter in the middle of it.

fold it and don't show the butter.

using a rolling pin, roll it out and form a long shape.

fold it from above to the middle and then cover the middle with the bottom. rotate it 90 degree and roll out the dough into one large long shape.
repeat this step for at least three times.

after three times , put it in a tray and put it in fridge for at lest 30 minutes.

take the cooled piece,roll out into a18-cm wide and 0.7-cm thick strips.

then cut into many isosceles triangles.

roll it from the bottom to top..

one bye one, put them in a baking tray. ferment for at least one hour.

brush egg on the surface of them. preheat oven to 200 C, and bake them for about 15-20 minutes.

The croissant is done.

split it and take a closer look . the interior is crisp, taste good.

可颂面包,法国人的一种传统早点。croissant,法语里是“羊角”的意思,所以有时候我们也称它为“羊角面包”。一杯牛奶或者咖啡搭配可颂,是法国人常见的早餐。它已有300多年的历史,现在的奶油面包可是从可颂面包发展过来的哦。它也是法国的传统和文化象征。吃起来咸香,酥脆可口。

原料:
高筋面粉 185g
低筋面粉 63g
酵母 4g
白糖 25g
盐 5g
牛奶 140g
油 25g
裹入黄油 140g
做法:
除黄油外其他材料混合,揉成光滑面团。不需要柔到扩展阶段。
将黄油放进发酵30分钟后的面团里,黄油重量大约是面粉的一半。
黄油擀成大片,放入面团的中间,四角折叠起来,不要让黄油露出来。
叠好,再次擀成薄片,大约是7mm的厚度,折叠三折,撒面粉。
上面步骤至少反复3次,面团和奶油形成层层的薄薄的夹层状。
擀成长方形薄片,放入冰箱冷藏30分钟。
冷藏后进行整形。切去边缘部分,形成规则的长方形。
再切成底边为18,高为9厘米的等腰三角形。从底部开始向上卷,逐个卷好。放入铺好锡纸的烤盘,二次发酵1个小时。
发酵完成,刷一些蛋液,烤箱预热200度,烤15-20分钟,表面金黄即可。做好的可颂内部酥脆可口,有浓郁的麦香味。

@ace108,是啊,但是如果往往材料越少,越简单的东西做起来反而不容易。我这个就是山寨版的可颂了。由于我没有买到进口法国专用面粉T55,就用国内的面粉替代了。
