Baked Stuffed Burritos are probably my favorite item on the Taco Bell Menu. I love that crunch on that golden burrito tortilla after its been grilled. If you have not tried Taco Bells Grilled Stuffed Burrito yet, you are seriously missing out on one of the finest fast food items ever created. Since I always like to take matters into my own hands when it comes to food and Taco Bell was the first place I ever worked at as a teenager. I figured I needed to recreate a healthier version of my favorite. So here goes.

Ingredients:
1 lb of chicken breast
1 cup of rice
1/3 of canned tomatoes minced
1 teaspoon of crushed red pepper flakes (optional)
1 tsp of cumin
1/2 cup of home made pico sauce or your favorite Salsa.
1/4 cup fresh cilantro minced
2 minced garlic cloves
2 teaspoons of Goya adobo or seasoning salt.
1/2 a lime
1 1/2 tbsp of butter to grease pan
1/4 cup if mexican shredded cheese
1/2 teaspoon of smoked paprika
3 of your favorite large burrito tortillas (make 3 burritos.

In a rice cooker combine the cup of rice, one cup of water, the cilantro, the chopped tomatoes, cumin, 1 tbsp of butter, 1/2 teaspoon of smoked paprika and a pinch of salt. Set the rice cooker on to cook and start marinading the chicken.

To the chicken add the lime juice, 1 teaspoon of adobo or season salt, 1/2 taspoon of cumin, 1/2 teaspoon of smoked paprika.
Set aside to marinade for 10 minutes before cooking.

Cook the chicken all the way through on the grill. If you have a charcoal grill much better for flavors.

Slice the Chicken Breast into small strips.

Heat your tortilla for 30 seconds so it becomes flexible and does not crack when folding. Can put it in microwave for 20 seconds or 30 seconds on each side on pan. Now we put all of pur ingredients inside the burrito and fold.

This is how you fold the perfect Burrito.

Put a pat of butter down in a pan and put your burrito in at high heat. Push down with a spatula to really get that crispy brown crust on the outside.

It should look like this when finished. You can then cut it and serve it with your favorite sides/toppings

This recipe I have to disagree with the Adobo as I think it contains MSG. You could make your own dry rub and use it instead using some combination of ingredients like salt, garlic, oregano, black pepper, lemon, cumin, bitter orange, hot pepper, or saffron.
Now you have something else to reinvent, and make it better

There is adobo with out MSG. I actually have yet to see adobo with MSG in it. That is not to say that in some regions it does not have it.

Good for you. I am very wary of MSG and this is one of the labels I watch out for.

Yeah I look at all labels of anything that is not a single ingredient. Especially for seasonings. If there is any preservatives or Chemicals in the ingredients I will not buy or use.

I have all of those ingredients in single containers, but most people do not. Sometimes I try to simplify long videos like this one to cut down video time and not to bore people to death with a 20 minute cooking video.
