Recipe for Pizza Style Potato Omelette

Ingredients


  • 3 medium potatoes
  • 5 eggs
  • 1/2 onion
  • ketchup
  • Grated mozzarella cheese
  • olive oil
  • Salt

Preparation



1.- Peel potato and onion. Chop the potato into very small squares and the onion into thin strips. Then we add both ingredients in a pan, with a good splash of olive oil. We are going to let them cook here, over a very soft fire. It would be like frying some potatoes, but with the softest oil. At about 100ºC.

2.- Once both tubers are very soft, after about 15 minutes, remove from the oil and place on a plate with absorbent paper. We put a pinch of salt and let rest a few minutes.

3.- While resting, in a bowl we put the 5 eggs. We add a small pinch of salt to each of them and beat well. Then add the potato and onion and mix until all the ingredients are well integrated.

4.- Put on medium heat, a little oil in a nonstick skillet. We add the egg and potato mixture and let it cook for about 5 minutes if we like the tortilla well curdled, and between 1 and 2 if we want it more babosilla. In this last case, you can raise a little the power of the fire, so that it is a little more brown on the outside.

5.- With the help of a dish and above all, with a lot of decision, we turn the tables. We introduce it again, in such a way that the other side of it is cooked. Then, with a wooden spoon, we go through the edges of the tortilla, to give a more rounded and much prettier. We let cook the same time as the other side.

6.- With the help of the dish, remove and we have the potato omelet made.

7.- Now, it's time to prepare it "pizza style". To do this, put a base of a good tomato sauce on it. Add also grated mozzarella cheese. You can add other ingredients to your liking, such as pepperoni, oregano or sausages. To me, with these two ingredients is enough because the tortilla alone already has a few. Once all the ingredients are added, bake it with it! 180ºC, long enough for the cheese to melt. Keep in mind that if you like the omelet plus lobster, here it will curdle a bit more so, cook it in the pan just enough to set it on the outside.
