How about another EASY ONE POT dish today?

As I said the other day..."The lights are going up, the carols are playing everywhere, the kids are getting restless from all their excitement, and the shopping malls are packed with gleeful shoppers. It’s such a magical time of year, but it’s also busy to an extreme." That was in BAKED BUFFALO CHICKEN MAC & CHEESE PASTA

And in the spirit of EASY, I am not going to get all wordy on this post.

We're keeping it simple on this one.

I will say this: This is one of those dishes that is hard to make look good in photos. I probably won't get many upvotes on this one, but who knows. You never can tell which post is going to take off. So many of mine, I thought we're going to do super aweome and then they bomb. Welcome to Steemit, yeah?

The title says chicken, but you totally substitute any meat with this dish.

ALL CONTENT IS MINE AND ORIGINAL! All of these food photos were taken with my Nikon D5300 and my favorite Lens, the Nikon AF-S FX NIKKOR 50mm f/1.8G. Most every time, I cross post on my personal blog which you can find in my INTRO POST.

Recipe

Ingredients

3 tablespoons olive oil
1 small onion, finely chopped
5 cloves garlic, minced
5 medium carrots, chopped
1-2 cups any veggies you have on hand, chopped (There are no rules here. I used mushrooms, broccoli, cauliflower, and zucchini)
salt & pepper
2 tablespoons fresh rosemary, chopped
2 teaspoons dried oregano
1 teaspoon ground cumin
salt & pepper
4 cups chicken stock
2 cups uncooked brown rice
3 cups shredded chicken meat (or meat of your choosing)

Instructions

  1. In a dutch oven or heavy bottom pot with tight fitting lid, saute onions and carrots over medium heat for about 5 minutes until softened.
  2. Add garlic and chosen veggies and continue to cook for 2 to 3 minutes more. Pour in stock and add brown rice, rosemary, oregeno, and cumin. Cover and reduce heat to low. Simmer, stirring occasionally, for about 45 minutes or until rice is al dente.
  3. Stir in chicken (or substitute meat) to warm and add salt and pepper to taste.
  4. Serve hot.
