These are some very simple to make treats that are versatile enough for breakfast or snacking.

RECIPE

Yield: 12 muffins

Ingredients

8 cups whole wheat bread cubes (about 16 slices regular sandwich bread)
4 eggs, lightly beaten
3 cups whole milk
3 tablespoons melted butter
1 teaspoon salt
1 teaspoon vanilla extract
1/2 cup sugar
1/4 cup pure maple syrup, plus more as desired for topping
1 1/2 teaspoons cinnamon
1 cup semi-sweet dark chocolate chips

Instructions

  1. Preheat the oven to 350 degrees F (180 C) and line a large baking pan with parchment. Spread the bread cubes out on the tray and place in the oven to toast for about 5 minutes, or until very dry and lightly crisp. Bake them a little longer if they need a few more minutes. (Tip: If you put them in the oven while it's heating up it helps dry it out quicker.) Remove the tray from the oven and cool.
  2. Line two extra large muffin tins with paper liners or grease them well with butter. In a large mixing bowl, beat the eggs, milk, and butter together until combined. Add the salt, vanilla, sugar, syrup, and cinnamon and mix well. Now pour in your toasted bread cubes and chocolate chips and toss them well in the mixture until evenly coated.
  3. Divide the mixture among the prepared slots in the pan and bake the muffins for 15 to 20 minutes until the tops are darkened and the muffins are fairly firm. Remove and cool for at least 5 minutes before serving. Add extra maple syrup on top if desired.

That rustic setting is perfect for those muffins. It looks like a nice chilly morning, all cozy in a cabin. It's interesting how having that jug of milk in the background adds so much. It just invites us into the whole picture. Very nice!
