Meaning of food safety

Food safety refers to the processes involved in handling, preparing and storing food in such a way that the risk of becoming sick from food borne diseases is reduced when we take our food. Food safety has become a concern to the entire world and covers a wide range of areas in food handling and preparation industries. Food safety has become a scientific process which describes handling, preparation and storage of foods in such a way that food borne diseases are prevented.

Meaning of cooking

Cooking is the skill or practice of preparing food by combining or mixing ingredients and heating them in fire produced by the fire wood, kerosene stove, gas cooker or electric cooker. In cooking, food is prepared by combining ingredients or mixing ingredients and having the combined materials to prepare a desired meal or dish. This skill is very important because good meal is very important in maintaining good health.

Reasons why we cook our food

There are many varied reasons why we cook our food. Such as :

1. Cooking makes food easier to eat.
2. Cooking makes food more appetizing and palatable.
3. Cooking makes some food keep longer than when it was raw. To such food, cooking acts as a preservative agent.
4. Cooking makes food safe for eating because it kills germs in the food.
5. Cooking soften food and thus makes food easier for digestion.
6. Cooking improves the taste of the food.
7. Cooking improves the appearance of the food.

Some Advantages of cooking food

• It is easy and quick way of cooking
• It soften food and this makes it easy for digestion
• Cooking retains the entire food nutrient in the cooking liquid.
• Food flavour are retained.
• Food cooked are easily digested.
• Some cooking method saves time.

Methods of food preparation

There are many methods of cooking our food. One type of food can be cooked in different other ways. Each of these different ways of cooking food can give the same food different tastes, texture and appearance. These different ways of cooking food are as follows:

1. Boiling
2. Frying
3. Roasting
4. Baking
5. Stewing
6. Steaming
7. Grilling

Some disadvantages of cooking methods are:

1. It leads to loss of water soluble vitamins through the water.
2. It takes a long and slow process to complete.
3. It consumes time.
4. Foods being roasted tend to shrink in size.
