Today's Sustainable Frittata Feast in the Garden of Eden

It is another incredible day in the Garden of Eden, and we are giving thanks for more than enough of everything in this abundant life of freedom!  


We made a delicious feast for our volunteers and special guests today, and because we have below freezing weather we prepared the food indoors on our wood burning stove rather than on the rocket stoves of our sustainable outdoor kitchen! We stayed nice and toasty, had a fantastic meal, AND heated water for showers for super sustainable efficiency. As usual, there was more than enough food for everyone, and we are happy to share our abundance with you!

Today we made a fantastic frittata feast! 



We started with our beautiful salad. We topped a bed of crispy fresh greens with strawberries, blackberries, broccoli, sugar snap peas, carrots, red onion, and sweet mini bell peppers! This is popping with wonderful colors, flavors, and textures, and of course each person could dress their portion exactly to their tastes with oils, homemade vinegars, and a variety of toppings like cheeses or seeds.



For the first frittata, we used onions, carrots, broccoli, ham, Swiss cheese, and 12 eggs beaten with a bit of whole milk. After the eggs had time to set, we topped the whole thing with cheddar cheese! 



Here we have our delicious first frittata cooking next to a skillet of bacon on top of the cozy wood burning stove. We made the bacon for a tasty potato salad! 



For the second frittata, we used onions, carrots, broccoli, mini sweet bell peppers, quest fresco, shredded mozzarella, pesto, with another dozen eggs. We topped this one with sliced of mozzarella after the eggs cooked.



We also made a hearty potato salad with lots of boiled potatoes, onions, celery, mayo, tomato olive mustard, rosemary, oregano, parsley, and salt. 



We stirred it all together, then set some aside just like this for our vegetarians. For our meat eaters, we stirred bacon into the remaining portion!



Here is the big bowl of our beautiful, warm, bacon potato salad!



And this was the vegetarian portion! We garnished it with extra pickles to visually distinguish it from the bacon potato salad. 



We love a beautiful presentation! We decorated the top of our vegetarian frittata with a bright, cheesy sunburst pattern for fun. Little touches like this take only a few seconds to make, but the extra consideration and love shines through in the food. 



We steamed a large pot of broccoli to serve on the side too. Today we chose to leave it plain and simple unlike the cheesy broccoli dishes we've been enjoying all week, because we already had so much cheese in our frittata main dishes. 



We made a delicious creamy tomato basil sauce to go over the top of our frittatas. 



This is the finished ham, veggie, and cheese frittata staying nice and hot in the cast iron skillet.



MMMMMMmmmmmm this vegetarian plate has a big scoop of the warm potato salad, steamed broccoli, garden salad, and cheesy veggie frittata topped with creamy tomato basil sauce! 



A plating for our meat eaters looked just as delectable! This has fresh salad with slivered almonds, steamed broccoli, bacon potato salad, and a big slice of the ham, veggie, and cheese frittata.



Our wood burning stove serves as a warming station for plates that people are not ready to eat yet. Doesn't the selection look lovely and cozy?? When we're not cooking on our stove top, we set bricks and rocks on top of it and allow them to heat up for an hour or more.  If we get cold in the house or are ready to go to bed, we wrap the rocks in a towel and cuddle it to stay warm in our currently below freezing temperatures. It's a fun, sustainable alternative to central heating!

And as you can see, it's perfect for setting plates on top to stay warm too. The plates are too delicate to be set directly on top of the hot stove and would break under such high heat, but our hot rocks act as a perfect buffer!

...and greens and carrots and blackberries and all kinds of other veggies! We're big fans of fruit on salads. Sweet & savory are excellent combos!

I love fruit in a salad. It adds a natural sweetness and flavor. The frittata looks good and really like swiss cheese. Beautiful and tasty meal.
