Today's Sustainable Feast in the Garden of EdensteemCreated with Sketch.

It's a rainy day in the Garden of Eden, so it's time for a rainy day feast! 


Who doesn't love grilled cheese sandwiches and hearty soup?! It's a perfect combo, especially when it's a little gray and drizzly out. 



Today we made a healthful version of the classic grilled cheese sandwich using gluten-free brown rice flour bread and vegan cheese. While they aren't exactly like the traditional version, they are still gooey, melty, hot, crispy, and satisfying! 

The residents of our ecovillage are choosing to forgo sugar, meat, dairy, and many carbs for a few weeks while we follow a focused anti-candida protocol (check out the series we're sharing on candida for more info). Technically, it's our day off of taking the natural treatment, so we chose to indulge a little bit more than we normally would with these vegan grilled cheeses while making choices that are still an improvement over the standard American diet.



They paired nicely with a creamy, hearty white bean and veggie soup! It's so yummy to dip a grilled cheese into a hot, steemy bowl of soup! 



We also made a big garden salad with fresh greens, cucumbers, carrots, onions, yellow tomatoes, and herbs.



We love our veggies, so we also made some sauteed greens for extra super plant healing powers. 



We made a skillet of sauteed cauliflower and carrots too! Look at all that delicious beta carotene! 



This was a great meal to enjoy with loved ones on a rainy day! Of course it was all prepared in our outdoor kitchen on sustainable rocket stoves we built by hand out of dirt, and we burned "trash" wood as fuel to prepare our epic feast. 



 

Food is important and we hope to inspire people to really take  time to eat, enjoy it, and share it with someone you love. We also hope to inspire more and more sustainable practices in regards to  food. We want to remind everyone to let food be your medicine too!
