Arepa with Perico (parrot)
A rich dinner or breakfast. Arepa with "Perico" (parrot). It is very easy
It is a typical dish of Venezuela. This is scrambled eggs and is called "Perico" because you can put all the ingredients you want.
My personal recipe for the Perico or scrambled eggs:
Ingredients:
- 1 egg
- 20 g of sliced bacon
- 1 chopped chives stem
- 1 tomato small chopped in small cubes
- hot pepper to taste
- a pinch of salt
Process:
In a bowl stir the egg by hand with a fork, put the pinch of salt and reserve, then into a pan place the bacon chopped in small pieces and browned, add the tomato, chives, hot pepper and fry until it get a golden tone. Finally, add the stirred eggs, mix and continue stirring until they are cooked, thas's all. Ready to put inside the "arepa", bread, cookies, "casabe" or eat alone.
Of course, I prefer this Perico with delicious arepa ;-)
