Ooo love this, i have the same issues with my sourdough breads drying out fast due to the lower fat content of the recipes etc. Have you tried covering with a tea towel once its out while it cools. When i read up on it its meant to help keep them soft etc. Seemed to work well then stored in a sealed container to help avoid drying out.

Oh, I just put them in a sealed container, and the extra one in plastic bag in the freezer. We mainly eat it as toast so it's not too bad.
