Talk about It #2: Meeting Lao Gan Ma

This time, I would like to share a kind of amazing sauce which is easy to find in Chinese kitchen but not in other countries pantries, that is: Lao Gan Ma.

In 2016, Lao Gan Ma generated a heated discussion due to an article on Weibo(Chinese social media), saying quite a lot of foreign friends were hooked by Lao Gan Ma chili oils and sauces and their infinite uses as ingredients, condiments and shortcuts though it is harder to get stateside. From the perspective of Chinese netizens, It is common for them to use Lao Gan Ma as condiments in tandem with ginger, scallions and soy sauce to improve the texture of food, such as noodles ramen, dumplings, rice dishes, and tons of other stuff. What is curious is that Lao Gan Ma is wildly popular throughout China and made people have a secret addition to it.

So why are people enamored of Lao Gan Ma?Here is the description of it on Gilt and Amazon.

Left to your own fruition we doubt you’d conjure up this combination of soybeans and chili oil. Its aroma is at once reminiscent of ripe pineapple and savory fermented fish. A bright red jar featuring a photo of stern-faced woman might establish people's first impression of Lao Gan Ma. The woman, Tao Huabi, who was as an illiterate, widowed mother opened a small noodle shop, that gained a wide support due specifically to her yummy chili sauce. The name “Lao Gan Ma” ,which means “Godmother”, came from a poor middle student who was grateful for her kind help and warm heart. In 1996, she shut down her restaurant to take her line of chili sauces into production, making her a millionaire and successful businesswoman. NOW, she still runs the privately owned Guizhou company with her two sons and leads the company to overcome difficulties and setbacks on the way forward.
